Live fire cooking demands constant attention and focus for the entire smoking process. It requires the right species of wood, the right expertise, the right temperatures and the right cuts of meat.
The result speaks for itself.
Matt has been cooking his entire life. From his early and humble beginnings cooking with his Mother and Grandmother to being the private Chef for a Royal family, he knows his way around a kitchen.
What has always set him apart is his attention to detail, his dedication to the craft and his absolute and undying love for food. He has traveled the world as a Chef, from Los Angeles to Martha’s Vineyard, Boston, Las Vegas, France, the Bahamas and Austin, Texas. It was in the beautiful city of Austin that Matt fell in love with Central Texas Barbeque. It was also where he met and fell in love with his partner in life and in business.
Leaving the City, Lily and Matt moved to Canada and returned to revitalize and operate her family farm. There, they grew their own food and, in the process, cultivated a deeper understanding and appreciation for food and where it comes from. But the itch for Central Texas barbeque never went away for Matt. And so, Old Style barbeque was born.
